Penne caprese

OK. Penne alla caprese.

Per serving:
  • 2 handsful of pasta
  • olive oil--I don't know, maybe 3 or 4 tablespoons?
  • 1 plum tomato, seeded and chopped
  • a good bit of basil
  • garlic--you won't use too much
  • salt--you could use too much, but don't be stingy
  • mozzarella--just the right amount
  • Parmesan--ditto
  • Cook the pasta
  • Combine all the other ingredients except the mozzarella--DON'T cook them
  • Drain the pasta and pour it into the bowl with the other ingredients. Toss well.
  • Add the mozzarella. Toss gently.
  • Serve with grated Parmesan and white--yes, white--wine.
