Per serving:
- 2 handsful of pasta
- olive oil--I don't know, maybe 3 or 4 tablespoons?
- 1 plum tomato, seeded and chopped
- a good bit of basil
- garlic--you won't use too much
- salt--you could use too much, but don't be stingy
- mozzarella--just the right amount
- Parmesan--ditto
- Cook the pasta
- Combine all the other ingredients except the mozzarella--DON'T cook them
- Drain the pasta and pour it into the bowl with the other ingredients. Toss well.
- Add the mozzarella. Toss gently.
- Serve with grated Parmesan and white--yes, white--wine.
